Vegan Matcha Granola

A perfect ongoing snack that is gluten-free, dairy-free, and filling for a healthier choice. It’s chewy, mildly bitter taste of matcha, and totally freezer friendly if you want to make in a big batch.

I’ve made granola back in 2020 and today, I come back with a new version of granola with matcha flavour. I just can’t emphasize how convenient it is to have granola at home.

I love having granola with yogurt before deciding to eliminate dairy from my diet. And now, I love having it with a fruit bowl as an extra carb, with non-dairy milk like a cereal bowl, as a topping on ice cream, or on its own as a snack between meals.

These wholesome and energetic snacks are packed with proteins, dietary fibres, and antioxidants. No fancy equipment is needed – just a baking pan, a saucepan, a glass bowl, and some basic cutlery that are already lying around in your kitchen.

You can enjoy these granolas as a quick breakfast before rushing out to work, or perhaps you want to eat something light before heading out for the gym, or you just want to munch on some healthy snacks throughout the day. These amazing granolas do the work for you. Bring some of these granolas with you and have them any time to keep your energy level stable throughout the day.

Matcha powder: Matcha is a powder that’s made of finely ground green tea leaves from the Camellia sinensis plant. Matcha is grown differently from green tea. It is rich in caffeine, amino acids, fibre and chlorophyll, and also high in antioxidants, including catechins, which may help prevent cell damage and lower your risk of chronic diseases. One cup of this amazing drink can be equated with 10 cups of regular green tea when comparing its nutritional value and antioxidant content.

Ingredients:

  • 2 ½ cups rolled oats
  • ½ cup pumpkin seeds
  • ½ cup chia seeds
  • ½ cup goji berries
  • ½ cup raisins
  • 1 ½ tablespoon matcha powder
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar syrup
  • 2 tablespoons canola oil

Instructions:

  1. Preheat the oven to 350°F or 180°C. Prepare a large baking sheet with baking paper.
  2. In a large bowl, whisk together the brown sugar syrup, canola oil, and vanilla extract. These are your wet ingredients.
  3. In another large glass bowl, combine oats, pumpkin seeds, chia seeds, goji berries, raisins, and matcha powder. These are your dry ingredients.
  4. Pour the syrup mixture over the dry ingredients and stir quickly to mix.
  5. Spread the oats out onto the prepared baking tray. Spread into an even layer and use a spatula to press lightly into the pan. Bake in the oven for 20-30 minutes till golden brown.
  6. Remove from the oven and press the granola slightly hard before it cools to help it stick together and therefore to form clumps of granola.
  7. Enjoy!
  8. To store: Store the granola in an airtight container and store it in a dry place for up to a month.
